I just swapped a 750cc motor and all went 'well' with two medium build people (men - no offense).
First I used 2 x 4 lumber to construct a small table-like structure. Took me about all of 8 minutes. Each of the four legs is comprised of two 2 x 4's nailed together to make a 4 x 4. Then, use the remaining lumber to span the legs creating the top surface of the table-like structure. If you need the extra strength the boards may need to be on end when spanning the legs (in "I" beam fashion.) The overall structure dimensions were something like 13" high, 12" wide, and 20" long.
Note that the top of the small table needs to be the same height at the bottom of the engine and have enough surface to support the motor.
With a floor jack underneath to support it, remove the bolts of the old engine. Then use the strength of the two people to shift the engine (to the right while sitting on the bike in my case) onto the small table you constructed. The table should be butted up against the side of the bike. --> Engine removed.
When you are ready to mount the engine, position the bike next to the small wood structure holding the engine. Place the floor jack under the bike and extend it to the height of the engine. Then use the strength of the two people again to shift the motor (left in my case) back onto the frame supports. Using the jack below and your collective four hands, insert the mounting bolts. --> Voila, engine mounted and ready for reassembly of remaining parts.
